Have you been craving some of those staples you used to have weekly? Is a creamy salad dressing one of them? This Dairy-Free Cashew Ranch is such a crowd-pleaser.
Now, I’m not going to lie and say it tastes exactly like ranch. BUT, it does taste quite similar, and with raw veggies, I even prefer it to the regular ranch.
I love to use this dressing to dip carrots and celery in or on top of buffalo chicken salad–a recipe for another day.
Dairy-Free Ranch Ingredients
1 cup raw cashews*
3/4 to 1 cup water (depending on how thick you want it)
1 tbsp white vinegar
1 tsp celery seed
1 tsp garlic powder
1 tsp salt (I like it salty! Cut this in half if you don’t)
Blend until smooth, then add 1-2 tbsp fresh dill and pulse in blender for an additional 15 seconds.
*If you do not have a high powered blender, soak cashews in water overnight before making this recipe.
